Mussels in White Wine (Moules Marinière)
Ingredients
- 1 kg fresh mussels, scrubbed and debearded
- 3 tbsp butter, divided
- 2 shallots, finely minced; 3 cloves garlic, minced
- 250 mL dry white wine
- A handful of parsley, chopped
- Pepper; crusty bread to serve
- Optional: a splash of cream
Instructions
- Scrub the mussels and pull off the beards. Discard any that are cracked or stay open when tapped.
- In a large pot, soften the shallots and garlic in half the butter over medium heat without browning.
- Pour in the white wine and bring to a strong simmer.
- Add the mussels, cover, and steam over high heat, shaking the pot once, just until the shells open — about 4 to 5 minutes.
- Discard any mussels that stayed shut. Stir in the remaining butter, the parsley, and a splash of cream if using.
- Serve straight from the pot in bowls with plenty of the broth and crusty bread.
